The 1921 guest rooms and suites at Disney's Coronado Springs Resort are dispersed amongst three villages (Casitas, Ranchos and Cabanas) that surround a 15 acre man-made lake Lago Dorado. The resorts feature rustic stucco buildings, Mexican-style bungalows and festive villages with Spanish terra cotta roofs.
- The Casitas village or "Little Houses", buildings are similar to those commonly found in Sante Fe or Monterey. The buildings set amidst the colorful plaza, fountains and courtyards are commonly used for the convention accommodations.
- The Ranchos have a more rustic, rural flavor to them, complete with an arroyo or small stream that tumbles over a rocky streambed. The guest rooms are housed in two- and three-story villas.
- The Cabanas are 2-storey Mexican-style adobe bungalows.

Maya Grill 
This full-service restaurant serves a variety of flame-roasted meat, fish and poultry from its wood burning open grill. Featured in several menu items are mouth-watering Mayan native seasonings, including the rare Achiote, blended with sour orange and onions to provide a delicate flavor and a golden color to the meat. Beyond Mexico, specialties more associated with Caribbean islands include plantain, black beans and rice, pineapple and such exotic fruits as papaya, carambolo and mangos.
A third major menu group comes from the ranchos of the American Southwest with thick T-bone steaks, pork and lamb.
The Maya Grill seats 220 diners. Serving hosts and hostesses wear costumes in desert tan and gold to complete the decor.
Typical menu items - Seafood, soup, pork chops, salad, rib eye steak, chicken, mixed seafood grill, beef tenderloin.
Specialties - Serves an American buffet for breakfast. Meats and seafood grilled over an open wood-burning fire and complemented with Mayan and Southwestern accompaniments.
Meals - Breakfast 7:00am-11:00am, Dinner 5:00pm - 11:00pm.

Pepper Market
At the Pepper Market, guests can assemble their own meal at nine food and drink stations. Patrons are escorted to tables upon arrival in the 420-seat dining area and given a handy ticket that allows them to collect whatever they wish to eat or drink from each station where attendants stamp their receipt so payment can be made at the end of the meal. This provides fast and efficient service and a complete choice for each member of the family. Despite its fast-service system, the restaurant uses real china, stainless dinnerware and cloth napkins. 
The nine stations include a grill serving fresh cooked eggs, hash browns, bacon and other items for breakfast -- hamburgers, french fries, rotisserie chicken or assorted fish at lunch and dinner. Pizza and pasta stations give guests an opportunity to observe as chefs toss freshly made pasta with a variety of sauces or watch while their pizza is prepared with individually selected toppings and baked on the spot. The Stir Fry Stand offers a variety of vegetables, mashed potatoes, rice and soups. Mexican specialties are featured at still another stop where corn- or wheat-flour tortillas are toasted fresh on a hot Comal cooking surface while, nearby, chicken and beef are grilled on a special grooved griddle. Tex-Mex specialties are also among the offerings plus a salsa bar with at least a dozen different salsa sauces. In the morning, the Mexican station offers egg burritos, frijoles and olla' -- large beans cooked whole in an earthen pot. The Beverage Bar provides a wide variety of Latin American coffees in regular or espresso style plus soft drinks, fresh fruit drinks and more. At still another stand, the aroma of freshly baking bread fills the Panderia, an open bakery where tables are piled high, each with a different variety of breads and pastries -- sour dough, white or farmers whole grain loaves, Danish rolls, English muffins, fresh fruit tarts and layered sponge cake covered with a special Natilla (a favorite Mexican custard sauce).

Typical menu items - Burritos, nachos, taco salad, egg roll, stir-fry chicken, Caesar salad, soup, turkey breast sandwich, fries, baked potato, cheeseburger, pizza, half-rotisserie chicken, pasta.
Francisco's
In addition to the restaurants, the pleasant, 200-seat Francisco's Lounge is adjacent to food areas. Specialty drinks include margaritas in a wide assortment of flavors served in hand-blown glasses. In a courtyard just outside the area are additional tables where guests can enjoy the Florida sun and their favorite food or drink. The restaurant area is located in the heart of the hotel near the main lobby.

Kid's Nite Out, Inc.
Kid's Nite Out caregivers can provide one-on-one in-room childcare in the comfort of a Walt Disney World® Resort room. The professional staff of Kid's Nite Out gives the child individual attention by playing a variety of fun-filled activities with him/her including reading books, coloring, or playing "I Spy" games. They can also provide a fun, well-trained sitter to just hang out with the family if they need a father's/mother's helper. Kid's Nite Out also plans and works children's parties, camps, and children's theme conventions.

- Services available 24 hours a day, 7 days a week at all Walt Disney World® Resorts

This area of Disney's Coronado Springs Resort is set among colorful plazas, fountains and palm-shaded courtyards. The Casitas (translation: Little Houses) resemble three and four story buildings in a village setting. This area was themed after urban areas of the American Southwestern (such as Santa Fe) and Mexico (such as Monterrey).

As you continue around the Espanade (the walkway that encircles Lago Dorado), it brings you to the Cabana Village. There also are three "quiet" pools, one for each of the resort's themed areas. Encircling the lagoon and linking those areas, the Esplanade provides a broad walkway for leisurely strolls. |
